The usual rice noodles are translucent and white in colour and it is interesting how Chef Pom makes it black with squid ink. Usually squid ink is used to make black coloured pastas and noodles and this is our first time having black coloured rice noodles.

Traditionally, the filling is either shrimp or char siew but this is crispy shrimp instead. You get the soft layer texture of the black ink rice noodles and the crispy bitey texture of the shrimp filling.

This is a familiar dish in most Chinese family. Steamed pork spare ribs with chili tobanjan sauce (soy bean paste). Sometimes, we add some black beans for more flavours but this is a traditional Chinese dish. It is easy to cook as you put everything together and steam.

The texture of the pork spare ribs is soft with the flavours of the chili tobanjan sauce with hints of spicy after taste. This is very enjoyable.
