What is an oyster cake? Well, it is probably a common street food in Singapore but it is unheard of in Malaysia. We have some oyster omelette stalls (lesser now) from here and there but never an oyster cake. Our first and only encounter with oyster cake is at the Maxwell Food Centre Singapore near the famous Tian Tian Hainanese Chicken Rice. This is the Maxwell Fuzhou Oyster Cake.

From what we know, Maxwell Fuzhou Oyster Cake was started in 1962 by Madam Pang Siew Ting, to support her five children. The oyster cake is a common snack food in Fuzhuo China.

 Since we never been to Fuzhou, we never know that there is oyster cake from there. The Maxwell Fuzhou Oyster Cake is priced at S$2 per piece which sums up to RM 6 per piece. We think S$2 for a sizeable oyster cake is reasonable.

The Maxwell Fuzhou Oyster Cake is deep fried into palm size oval shape puff. The end product is golden brown in colour.

The texture is crispy on the outside while inside it is soft and it comes with minced meat, prawn, chopped oysters, crushed peanuts, coriander and rice batter. The combination of the flavour and texture is really tasty and you won’t stop at the first piece.
