Picarones The Peruvian Doughnut

Time to share some of the food I had in Peru and this is quite unique and yet delish. Nestled amongst the towering Andes and the vast Amazon rainforest, Peru boasts a rich culinary heritage. While ceviche and lomo saltado often steal the spotlight, there’s another delightful treat waiting to be explored and it is called picarones. I call it the Peruvian Doughnut.

My first time having Picarones was at a family gathering in Lima Peru. My distant Peruvian family was having a family gathering / party and they were cooking and serving Picarones.

Due to the shape like doughnut, I find it very interesting. Picarones are fried like doughnut but the shape is not exactly round but it is still similar.

These golden-fried doughnuts are unlike anything you’ve ever experienced. Unlike their fluffy American counterparts, picarones are made from a batter that combines sweet potato and winter squash (zapallo) for a unique dense texture and a vibrant orange hue.

But the magic doesn’t stop there. Picarones are traditionally served drenched in a warm chancaca syrup. For the uninitiated, chancaca is a block-shaped panela made from evaporated cane juice, resulting in a thick, rich syrup with a deep caramel sweetness. A sprinkle of cinnamon adds another layer of warmth and spice, making each bite a symphony of flavors and textures.

Picarones are soft in texture and slightly crispy on the outer layer. With the added chancaca sauce, it offers that extra sweetness that you won’t resist for more.

Picarones are a versatile treat. They can be enjoyed as a sweet snack throughout the day, or even served as dessert after a hearty Peruvian meal. Street vendors are the best places to find them, their sizzling pans sending out irresistible aromas that will lure you in. But don’t be surprised if you find them on menus at fancy restaurants as well.

From what I read on internet, the Picarones transcend social status, acting as a delightful reminder of Peru’s rich cultural tapestry.
