Thank you Asian Food Channel again for inviting me to watch Martin Yan in person in Malaysia lately. It is always fun to see an international celebrity chef live in person. As part of the 8 treasures of China Tour with AFC, Martin Yan made a pit stop in Malaysia for a weekend of excitement. As part of the internet media, I got the first hand experience of Martin Yan’s cooking demonstration workshop. It was fun, lively and good food and I am here to share one of the 3 recipes I experienced from the event.
Spring Rolls with Spicy Avocado Dip
Ingredients:
Spring Rolls
3 peeled shrimps
2 slices of cheese
3 sheets of spring roll wrapping
Salt
Pepper
Dip
1 ripe avocado, seeded and peeled
2-3 birds eye chillies, minced
1 cloved garlic, minced
Juice from 1 lime
Salt
Pepper
Method:
- Poach shrimps.
- Grate cheese and mix with a little salt and pepper.
- Wrap a shrimp with a little cheese in each spring roll wrapping. Deep fry until golden brown. Drain well.
- Take flesh avocado and mash. Season with lime juice, birds eye chillies, salt and pepper. Serve with spring rolls.
The spring roll was crunchy and cheesy. Well, I would put more cheese with this recipe as I love the cheesy feelings. For the dip, it was equally tasty. It is really smart to use avocado for the dip. . I hope with the recipe above, everyone can try to make it themselves.
