It was fun and delicious at Tourism Australia Booth at Hall 1 in Matta Fair 2011 today. Why fun and delicious?
This time around, Tourism Australia invited Chef Cole Thomas all the way from Adelaide. Chef Cole Thomas demonstrated a few interesting dishes at the booth.
It was the floating fish dish and the mozzarella balloon.

The floating fish is actually a dish where you can eat the fish floating on the air like a fish underwater. The concept might sounds easy but the “science” and the preparation behind it is enormous! He will be still doing demo until this weekend. Experience the magic of the floating fish yourself. I won’t post any spoiler pictures here but just to inform you guys, it involves ceramic and liquid nitrogen!

The mozzarella balloon is actually a mozzarella balloon with fillings of tomato mixture inside. The method of eating is to swallow the whole balloon and bite the mozzarella. The instant burst of the balloon causes a great surprising reaction that will blows your taste bud away. It was a genius dish.
